Ariane offers trained culinary professionals tips, recipes, and techniques to accommodate diners with multiple dietary restrictions at once. This is particularly useful for people who have private chefs that they are attached to, but who are unable to accommodate new dietary restrictions based on recent health issues or goals. It’s also useful if you have a beloved private chef whom you wish was better able to feed your entire family one cohesive meal, even though you have assorted restrictions and preferences between family members. Chef Ariane treats working with many restrictions simultaneously as a puzzle to be solved in as joyful a manner as possible, and can teach your chef to do the same.

If you are a chef who would like to know how to better utilize whole food ingredients to feed entire groups of people with complex needs one meal instead of several simultaneous ones, Ariane can help on that front as well. Alternatively, if you are only looking to be more well-versed in one specific area, such as gluten free baking or vegan cooking, Ariane can guide you through that singular, pointed focal point to save you the time and energy of hit-or-miss recipes and techniques.

Chef training sessions can be booked by the day or week, with 7-8 hours a day spent learning new techniques and recipes specific to the dietary restrictions on hand. Prior to your time together, Ariane consults virtually with the chef, and the client if applicable, to discern dietary needs and current skill sets. She then draws up a comprehensive document that includes the techniques and recipes to be taught, broken down to the hour for each day, as well as a shopping list so everything can be on hand in advance, and sends the recipe list to the client for approval in advance.

Ariane has trained private chefs in cities including Los Angeles, New York, Chicago, and Paris, and has educated chefs of Michael Mina’s MINA Group, as well as the executive chef of the Four Seasons Paris, about cooking for special diets. The daily rate for chef training is $1200, and she offers a 10% discount when a full five day week is booked. If you are located outside of the Los Angeles area, travel and accommodations are to be provided. Interested in this service? Send Ariane an email detailing your needs, and she’ll be happy to schedule an initial discussion.
